Vĩnh Phúc is a midland province known for cá thính Lập Thạch — a rustic fish soured and cured in thính (roasted ground rice) that has people reaching for more rice — along with the plain bánh hòn of Hương Canh and the free-range hill chicken of Lập Thạch. Its cooking carries the mark of a half-hill landscape where the lowlands meet the mountainous midlands.
