Thanh Hóa

Thanh Hóa is the transition between the northern delta and the north-central coast, holding the plain of the Mã river, the seaside of Sầm Sơn and the salt-touched land of Nga Sơn all at once, and its cooking is correspondingly varied: from nem chua, the fermented pork roll famous across the country, to the painstaking gỏi cá nhệch of the river mouths, to chả tôm grilled with the sea flavour of Sầm Sơn.
