Thái Nguyên is called Vietnam's 'first among famous teas' thanks to the chè Tân Cương known across the country, alongside cơm lam from Định Hóa carrying the flavour of the Việt Bắc uplands and bánh chưng Bờ Đậu boiled in natural spring water. This midland province blends the cultures of the northern mountain peoples into every dish.
