Thái Bình, the coastal rice country of the Red River delta, is known for the fragrant, chewy bánh cáy of làng Nguyễn, once sent as tribute to the king; for canh cá Quỳnh Côi with its deep country flavour; and for the humble gỏi nhệch of the brackish water along the rivers. Thái Bình cooking is plain but full-flavoured, a reflection of a life bound to the paddy fields and the waterways.
