Quảng Nam
Quảng Nam is where the cooking of central Vietnam converges, and its old town of Hội An was a bustling trading port in the 17th century where Vietnamese, Chinese and Japanese cultures met. The food here is bold and dry rather than soupy, heavy on raw herbs and local produce, and nothing typifies it more than mì Quảng — the dish that carries the region's own name.
