Phú Yên is a south-central coastal province known for the country's largest ocean tuna fishery (Vũng Rô, Đông Tác) and for brackish lagoons such as Ô Loan and Cù Mông that yield distinctive seafood. Phú Yên cooking leans clean and lightly spiced, making the most of live sea produce — above all ocean tuna eye, Ô Loan blood cockles and bánh canh hẹ.
