Phú Thọ

Phú Thọ — the Đất Tổ, the ancestral land of the nation — has a plain, homely cuisine stamped by the Mường people and the midland farmers, above all thịt chua Thanh Sơn, pork fermented inside a bamboo tube, and bánh tai, a plain-rice cake with a pork filling. Alongside these, the produce of the cọ palm, such as cọ ỏm, is a culinary trait of the northern midlands that is hard to find anywhere else.
