Nam Định is held to be one of the cradles of Vietnamese phở (rice-noodle soup), which grew out of the two villages of Vân Cù and Giao Cù, where the trade is a hundred years old. Thành Nam (the old name for Nam Định city) is known besides for the soft, fragrant bánh gai bà Thi and the crisp, nutty kẹo Sìu Châu — country gifts that generations have grown up with.
