Lào Cai

Lào Cai is a highland province of the Northwest on the Chinese border, home to temperate Sa Pa and to the Bắc Hà market day, bright with the colours of the Mông and Dao people. Its cooking carries the mark of the mountains and forests: thắng cố of horse simmered in one great pan, cá hồi (trout) raised in Sa Pa's cold streams, and the rich, fragrant meat of free-ranging village pigs.
