Lai Châu

Lai Châu is a border province in the far Northwest, home to Thái, Dao and Mông communities who let their livestock roam and fish the mountain streams. Its cooking is defined by plain grilled and ash-buried dishes such as lợn cắp nách, cá bống vùi tro and lam nhọ, which keep the raw flavours of the mountains intact.
