Hòa Bình
Hòa Bình is the cultural cradle of the Mường people, with stilt-house hamlets set among limestone valleys. Mường cooking here is bound up with fermenting and souring meat to preserve it, and with cooking rice inside ống tre (bamboo tubes), producing dishes such as thịt muối chua, cơm lam and thịt trâu nấu lá lồm — lightly sour, deeply savoury and quite their own.
