TP. Hồ Chí Minh (formerly Sài Gòn) is the liveliest food centre in southern Vietnam, where dishes from every region and from the Chinese and Khmer communities have gathered and been reworked. The cooking leans sweet and rich, uses plenty of herbs and carefully mixed dipping sauces, and is defined by a culture of eating out, and eating late, on the pavement. Cơm tấm, bánh mì and hủ tiếu are the dishes bound up with the city's urban rhythm.
