Hải Phòng

Hải Phòng is the largest port city in northern Vietnam, and its food culture carries the mingled marks of coastal life, the Red River delta and the French colonial period. Cooking here is known for being clean-tasting — never too hot, too salty or too sweet — prizing the freshness of the seafood and the celebrated nước mắm (Vietnamese fish sauce) of Cát Hải.
