Hải Dương is known as the home of bánh đậu xanh (a pressed mung bean sweet), an elegant little treat usually taken with tea, along with the celebrated Thanh Hà lychee and the chewy, fragrant bánh gai of Ninh Giang, made here for centuries. All three specialities are tied to traditional craft villages and reflect the refined way of life of the old xứ Đông region.
