Hà Tĩnh cooking is plain but full-flavoured. Its emblem is kẹo cu đơ, sweet and nutty with cane molasses and peanuts, a country gift tied to an unusual folk story — alongside coastal dishes such as gỏi cá đục and homely plates like ram bánh mướt.
