Gia Lai

Gia Lai is a red basalt plateau in the northern Central Highlands, where the cooking of Kinh settlers meets that of the indigenous Jrai and Bahnar. Its characteristic dishes lean on mountain and forest produce — grilled meat, cơm lam (rice cooked in a bamboo tube) — along with phở khô, the dish that has become the culinary emblem of the hill town of Pleiku.
