Đồng Tháp

Đồng Tháp is known as the "land of pink lotus", where the annual floating-water season brings an abundance of country produce. Its cooking is defined by the famous hủ tiếu Sa Đéc, by the dishes made from field rats during the flood season, and by nem Lai Vung with its distinctive sweet-sour ferment.
