Điện Biên is the land of the Black Thái people in the Northwest, known for its fragrant, chewy Điện Biên rice and for mắc khén (Northwest Vietnamese wild pepper), the spice of these mountains. The cooking leans towards deeply seasoned grilled dishes and wild produce such as hoa ban (bauhinia blossom) and rêu đá (moss gathered from stream-bed stones), reflecting how closely the ethnic-minority communities here live with nature.
