Đắk Lắk is the coffee capital and the heart of the cồng chiêng (gong) culture of the Central Highlands, with the city of Buôn Ma Thuột leading its cuisine. The food here brings together the traditions of the native Ê Đê and M'Nông peoples (grilled chicken, cơm lam) and town dishes of its own such as bún đỏ, which came out of the Buôn Ma Thuột night market.
