Cao Bằng

Cao Bằng is the border province at the head of the Northeast, home to the Tày and Nùng peoples and to a cuisine steeped in the mountain forest, built around mắc mật, duck, and dishes made from rice flour. Phở chua tossed dry, seven-flavour roast duck and bánh cuốn ladled with bone broth are the dishes that make the character of this land of peaks and water.
