Cần Thơ is the hub of the Mekong Delta, known for the Cái Răng floating market and a river-country cuisine that is western-delta through and through. Its cooking turns on abundant freshwater catch, long-fermented mắm (fermented fish), and the habit of eating everything with great heaps of fresh herbs — which is what makes Cần Thơ food both deep-flavoured and fresh at once.
