Trà Vinh is a coastal province of the Mekong Delta where the Khmer community makes up about a third of the population and has left a deep mark on local food culture. Its cooking is a meeting of Kinh, Khmer and Chinese tastes — most notably bún nước lèo (a rice-noodle soup) rich with mắm bò hóc (fermented fish paste), the bánh tét of Trà Cuôn from a century-old craft village, and rare delicacies such as đuông chà là (date-palm grubs).
