Quảng Trị cooking is tied to its rivers and its long-established craft villages: cháo bột cá lóc, whose chewy dough strands have to be eaten with chopsticks; bánh ướt Phương Lang, from a village trade nearly a hundred years old; and the cháo cá vạt giường variant of the Hải Lăng area — all carrying the sharp, peppery heat typical of the sun-and-wind Central region.
