Hưng Yên
Hưng Yên is bound up with the nhãn lồng (a prized longan) of Phố Hiến — a fruit once sent as tribute to the king and praised in the writings of Lê Quý Đôn — along with the celebrated hand-fermented tương Bần and the gà Đông Tảo with its remarkable legs. This is a rich stretch of country on the bank of the Red River, where the farm produce has become the local culinary pride.
